About, L’Impression Café, brunchstronomie in Lausanne
In the building of the former Vaudoise printing works and the newsroom of the Nouvelle Revue, a four-minute walk from Lausanne train station, Omar and Sophie opened L’Impression in 2017 and compose plates the way typesetters once composed pages: with intention and precision. They gave this cooking a name, brunchstronomie, bistronomy applied to brunch, and a rhythm: 7 days a week, 100% homemade, following the seasons and the producers of French-speaking Switzerland. Gault&Millau ranks L’Impression first in its Top 10 of Lausanne brunches. They prefer to let the plates do the talking.
“Brunchstronomie”, defined by the house

The word belongs to the house: it sits in the Instagram bio and Gault&Millau uses it verbatim (“sa ‘brunchstronomie’ soignée et inventive”, Top 10, 24.02.2026). In practice: the Anglo-Saxon brunch classics, eggs Benedict with house-made hollandaise, soufflé pancakes, avocado toast, treated as bistronomy, with regional produce (juices from the Marcelin agricultural school in Morges, pastries from the Boulangerie de l’Hôtel de Ville in Crissier), a menu adapted to every diet and plates that can be composed product by product.

Sophie Matthey, co-founder, direction. The house’s media voice: a 45-minute guest on Swiss public radio RTS La Première (“On en parle”, 19.06.2026) to break down the “brunch 2.0” trend, where she explained that guests with special requests can pick every product individually and have their plate built for them (RTS, 19.06.2026).
